Healthy Peach Cobbla’ Muffins

What cha need:
• 1 ½ cup spelt flour
 ½ cup coconut sugar
• 2 tsp baking powder
• 1 tsp cinnamon
• ¼ tsp sea salt
• ½ cup melted, room temperature coconut oil
• ¼ cup almond milk
• 1 flax egg (1 tbsp ground flax + 3 tbsp water, allow to sit and gel up)
• 2 peaches, peeled & diced and mixed with juice from ½ a lemon

….for the topping….
• ½ cup chopped walnuts
• 1/4 cup coconut sugar
•  ½ cup spelt flour
• 2 tbsp melted coconut oil
• 1 tsp cinnamon
Combine until crumbly→if you find it is too moist, add small amounts of spelt flour until crumbly.

What cha do:

1.) mix together the flour, coconut sugar, sea salt, cinnamon & baking powder.
2.) in a separate bowl, combine the flax egg, coconut oil & almond milk.
3.) fold the wet ingredients in with the dry.
4.) fold in the walnuts and diced peaches.
5.) set oven to 400°
6.) scoop batter into a muffin tin and top each one evenly with the crumble
7.) bake for 22-25 minutes
