Good For You Lemon Poppy Seed Muffins

Lemons+Poppy Seeds+The Muffin Recipe Below= Happy & Healthy You

Ingredients:
•1/2 cup room temperature coconut oil
•1/4 cup honey or maple syrup
•2 eggs or flax eggs for vegans
•1 tsp baking powder
•the zzzzzest from one small lemon
•the juice from that lemon (about 2 tbsp)
•1 cup oat flour
•1/2 cup almond flour
•2 tbsp water
•2 tsp poppy seeds
•1/4 cup walnuts (optional, I like a crunch)

*** I garnished some with hemp seeds, coconut (which toasted as it baked. Yum.) and more walnuts for extra crunchy. Go wild with the garnish.

Directions:
1.) preheat oven to 350 degrees
2.) whip together coconut oil and eggs (or flax eggs if vegan) with a big spoon until creamy
3.) stir in honey/maple syrup
4.) mix in remaining ingredients
5.) scoop about 2 tbsp of your scrumptious batter into lined muffin tins
6.) bake for about 19-21 minutes (until an inserted tooth pick comes out clean)
