During Christmas, my crazy brother and I went to Brisbane, Queensland to spend a week there to explore. When I’m travelling around, whether it’s a day trip or a two week trip, I still try to eat healthy. It can be difficult though but once you get the hang of it, it isn’t too bad. Below I will show you a few meals I ate to give you an idea of what I choose to eat to stay healthy. There is also going to be a yum recipe for the last meal as I can’t just keep it to myself because it needs to be shared!

Australia is quite well known for being healthy and having healthy options in restaurants and cafés. This made myself and my tastebuds quite excited to venture around and try new spots to eat!

Brother and I drove to the Gold Coast for a beach day and ended up at a place called “The Loose Moose”. Now my Canadian instinct saw the name and the decor of a country setting and made the executive decision to grab some breakfast there. Good choice on my behalf. I had the Pitaya Bowl which was topped with scrumptious granola, fresh fruit and just looked so aesthetically pleasing. 



Then to save a little money I chose to grab some bircher from the grocery store. Bircher is pretty much overnight oats with nuts, seeds and some dried fruits to add a sweet kick to the bowl. Since it’s soaked in your choice of milk overnight it is incredibly refreshing on a hot summer morning while sitting on the deck. I topped mine with unsweetened coconut yogurt and free fruit. So yum. 


Another meal I made at home for the brother and I was a creamy beet & avo salad with chickpeas. The dressing is a coconut yogurt based dressing with a little kick thanks to the jalapeño. It is vegan but you can add fresh baked chicken if you are a meat eater. That is what I did to please my always hungry brother. I will place the recipe below for you! 


Beetroot & Avo Summer Salad with Chickpeas:
Salad Ingredients:
•2 boiled beets, diced

•1/2 cup cooked quinoa
•1/2 cup cooked brown rice
•1/2 cup cooked, unsalted chickpeas
•1 avocado diced
•pinch of sea salt
•1/4 cup chopped cilantro 
•1 diced red pepper
•1 small white onion, diced
•3 tbsp nut/seed of choice
•handful of washed greens of choice
•2 baked chicken breasts, diced (optional)

Salad Dressing Ingredients:
•1 cup unsweetened, plain coconut yogurt

•1 jalapeño, sliced thinly
•pinch of seal salt
•dash of fresh cracked pepper
•1 tsp dried basil
•2 large garlic cloves minced
•1 tbsp maple syrup or honey (if not vegan)

1.) Mix dressing ingredients together in a bowl
2.) toss all salad ingredients together except the greens
3.) combine the two together
4.) place on the bed of greens and enjoy! 

Like I said, I do my best to eat as healthy as possible while on vacation but don’t get me wrong! I definitely enjoy my treats and nice meals out with the brother 🙂 Balance, balance, balance.
