Healthy, vegan, gluten-free zucchini brownies. YUM.

•1/4 cup maple syrup
•2 tbsp cocoa
•2 flax eggs
•1/2 cup grated zucchini
•handful of dates soaked in hot water prior (6-8 dates)
•1 ripe banana
•dash of sea salt
•1 cup oat flour
•1/2 cup plant milk
•1/2 cup almond flour
•1 tsp baking soda
•1/2 cup chopped nut of choice (I used peanuts, obviously 🙂 )

Date Icing:
•another handful of dates soaked in hot water
•1/4 cup nut butter
•2 tsp cocoa powder
•1/4 cup water
• 1 tbsp maple syrup *optional

1.)preheat over to 350
2.)In a food processor, process all ingredients (except chopped nuts) together until smooth
3.)Toss in nuts but leave little for garnish
4.)Pour mixture into greased casserole dish and bake 40-45 minutes
5.)While that yumminess is bakin’ process all of the date icing ingredients together until smooth and then place in fridge until needed
6.)Once the brownies are done doing their thaaang, allow to cool completely before icing them
7.)ice them with your date icing once cooled and garnish with the remaining chopped nuts
