The other morning I decided to treat myself to some delicious, fluffy pancakes. These babies are vegan, healthy, sugar free and packed with protein! Super simple to make and calls for minimal ingredients. Hope you enjoy xx

Ingredients:
-1/3 cup almond flour
-1/3 cup lentil flour
-cinnamon to desired taste
-1/2 cup unsweetened almond milk
-1 tsp baking soda
-1 tbsp ground flax mixed with 3 tbsp of water (flax egg)

Directions:
1.) Mix dry ingriednts then add almond milk and flax egg.
2.) stir until runny consistency (may have to add a tad bit more almond milk)
3.) Place on oiled or non stick pan and cook like normal pancakes!

I topped mine with sesame seed butter which I may almost like better than nut butter. So. Freaking. Good. I also used honey (you can use maple syrup to make it completely vegan of course), poppy seeds, which are high in antioxidants,  and sliced bananas. I was eating this with a big smile on my face. It was incredible. Please try it!
