Something about blasting the country music, lighting a candle and having all the right ingredients to bake something phenomenally delicious..makes my heart super happy. Especially when you’re doing it for someone else. This cake isn’t just a regular cake to me. It was made with pure love.
This right here is a delicious version of a healthy, vegan, easy black forest cake. I know, it looks like a lot of steps and ingredients but once you have every you need it really only takes about 20 minutes to do! So please, give it a whirl! You will not be disappointed.
•1/2 cup almond flour
•1/2 cup oat flour
•1/4 cup cocoa
•1 tsp baking soda
•1 tsp baking powder
•pinch of salt
•2 flax eggs (2 tbsp ground flax : 2 tbsp water, let set for 5 minutes prior to use)
•1/3 cup coconut oil, melted
•1/3 cup maple syrup
1.) preheat oven to 350˚
2.)puree bananas and wet ingredients in a food processor until smooth
3.)mix dry ingredients
4.)combine wet and dry together
5.)place in two 6 inch round pans & bake for 35-40 minutes
-once it has baked. allow to fully cool until assembling the cake
-once cooled…assemble the cake to your preference with the healthy additions provided below.
•1 can chilled full fat coconut milk, refrigerated over night (do not shake)
•1 cup arrowroot powder
•stevia to taste (preferably powdered stevia)
•chilled glass/porcelain bowl
1.)Once your coconut milk has chilled over night, be sure not to shake or tip it at all otherwise the fat will all get mixed again.
2.)open can and gently scoop out the solidified fat on top and save the liquid for smoothies or other baking
3.)in chilled bowl, use a hand blender or mixer to mixed together the coconut fat, arrowroot powder and stevia. place in refrigerator asap and allow to sit until you are ready to use.
Cherry Filling Ingredients:
•1 can pitted cherries
•2 tbsp chia seeds
1.)combine the two together and let sit to allow the chia seeds to thicken the mixture
