DSC00158Some people crave bread and cheese, I crave kale, avocado and nutritional yeast.  Those were my craving for the day. So I went ahead and whipped together the most simple, quick salad this afternoon. It is packed full of nutrients.

Kale. It is the god of all leafy greens. It is packed with so many nutrients. I used to dislike it a lot due to its hard, crunchy texture and bitter taste but I recently discovered the technique of massaging the kale! It’s a whole new world! It makes it so soft and brings out many more flavours. Similar to when you aerate wine. Changes everything.

Ingredients:
•kale
•3 garlic cloves, crushed
•1/2 ripe avocado, diced
•1/2 lemon, its juice
•nutritional yeast (I use a whole schwack load but 1-2 tbsp will suffice)
•dash of sea salt

Directions:
1.) destem kale and while you are rinsing it break it apart and massage until you feel the texture change and the bunch getting smaller. (You will start to see some green liquid leak out. Stop once you do see that. Those are valuable vitamins.)
2.) place your massaged kale into bowl along with the rest of the ingredients.
3.) using your hands again, begin to massage the avocado and ingredients into the kale thoroughly.
4.) garnish with whatever you wish and enjoy.  I just used slivered almonds and pickles on the side. Pickles-random, but delicious.

So good!DSC00160P.S. Did you know just 1 tablespoon of nutritional yeast cheesy goodness has 3 grams of protein? I just figured that out and it blew my mind. I love that stuff. Great for vegetarians and vegans due to the high B12 content which many people mainly get from animal products but not us veg heads.

    1. You NEED to get it. So good for you. And it literally tastes like cheese flakes. It’s incredible. You can make a cashew cheese sauce with it wit soaked cashews processed with some nutritional yeast. Get it and let me know what you think! x
