DSC00148Everyone knows beans are so hard for our stomachs to digest. This is due to the phytic acid surrounding them that our bodies haven’t developed enzymes for. So, this is my alternative to a  hummus when I want a dip but don’t want to deal with the stomach pains!

•healthy•vegan•simple•yum•
Ingredients:
•1 large organic (or very well washed) zucchini , diced
•1/4 cup tahini or peanut butter (I didn’t have tahini & that is what all hummus’ usually call for so, I actually used peanut butter and it tasted so good giving it a hint of a nutty flavour)
•2-3 minced garlic cloves
•1 tsp cumin
•juice of 1/2 of a small lemon
•1 tsp olive oil
•1 tsp sea salt

Directions:
1.) place all ingredients into a food processor and combine until smooth.

This was my dinner last night which was delightful. Homemade sweet potato baked chips, sautéed veg & the zucchini hummus. Yaaaaum.
