DSC00123This scramble is a great early morning breakfast idea to include numerous different nutrients to kick start your day. It is so simple and quick. Follow along.

Ingredients:
•Kale, spinach, any kind of leafy greens (I like kale. Provides more texture.)
•Red bell pepper, diced
•Diced onion
•Bucket load of minced garlic, yummy
• 1/4-1/2 block of medium firm- firm tofu
•1/2 tbsp coconut oil
•1 tsp paprika
•2 tbsp nutritional yeast
•sea salt & pepper
•cayenne (to your personal spice liking)
•avocado for garnish

Directions:
1.) Melt coconut oil in pan and add garlic & onion.
2.) Once onion is translucent, add in paprika, cayenne, nutritional yeast & bell pepper. Sauté for 3-4 minutes.
3.) Add stemmed, rinsed kale. Mix together.
4.) Crumble tofu over this delicious mixture & combine everything together for 3 minutes or so.
5.) Finish with salt & pepper and garnish with avocado!

Easy PEASY. Look at all those nutrients you’ve just gotten.
