IMG_7322I got the absolute pleasure to go to my moms in my gorgeous hometown for Christmas. My mom and Grandma are my two best friends in the world. Since transitioning to a vegan lifestyle my mom has been incredibly supportive. She is really into healthy eating as well so we get to enjoy baking, cooking and sharing amazing recipes with one another. It makes life so much easier. I hadn’t realized how many people do not support this lifestyle. But not their life, is it? 🙂
IMG_7312SO! for Christmas, my mama was an absolute gem and helped me create a whole vegan Christmas dinner. Below is a recipe for an AMAZING dish. When I say “amazing”, I truly believe thats an understatement. Because this is seriously the bomb dot com. If you don’t try this…I’m going to go out of my way to make it for each and everyone of you because you haven’t fully lived yet until you have this.

Sweet Potato Casserole
vegan•healthy•incredible•simple•for the sweet tooth•
Ingredients:
sweet potato mash:
•4-5 sweet potatoes (peeled, chopped & boiled until tender)
•1 1/2 tbsp coconut oil
•2 tbsp maple syrup
•1 tsp vanilla
•1 tsp cinnamon
•1/2 tsp ground ginger
•1/2 tsp sea salt

nut crumble topping:
•1 cup gluten-free rolled oats
•1/3 cup chopped pecans
•1/3 cup almond flour
•1 tsp cinnamon
•1/4 tsp sea salt
•2 tbsp melted coconut oil
•2 1/2 tbsp maple syrup

directions:
1.)preheat oven to 375˚ & grease large casserole dish
2.)For the topping: pulse oats in high speed blender or processor until coarsely chopped. Mix dry ingredients together & then stir in the wet ingredients.
3.)mash the potatoes and combine with the wet ingredients and stir in the rest of the dry ingredients
4.)spoon the potato mash into the casserole dish
5.)sprinkle the crumble on top and smooth out evenly
6.)bake 16-22 minutes until hot throughout and the crumble is crispy
