I don’t know why but I absolutely love to create cute little surprise date nights. This will be good for maybe a New Years Eve night with your other half or just a random night that you’d like to remind them that they are loved 🙂 So simple because you can do something like this in the comfort of your own dining room rather than having to go out. This is super simple but oh so meaningful. And SO much fun to do. I get butterflies every time I set something up like this as a surprise.

Maybe these photos will inspire you and give you an idea of possibly setting up something for your significant other. They’ll absolutely love it.

Lentil Casserole
healthy•vegan•delicious•gluten-free•grain-free•

Sauce Ingredients:
•1/4 cup tahini
•3 garlic cloves, pressed in a garlic press or minced finely
•1/2 cup fresh lemon juice
•1/4 cup nutritional yeast (very high in B-vitamins)
•1-2 tbsp olive oil
•sea salt & pepper to taste

Lentil Mix Ingredients:
•1 cup soaked & cooked green lentils
•1.5 tbsp olive oil
•1 onion, chopped
•3 garlic cloves, pressed
•1 bell pepper, chopped
•3 cups spinach or massaged kale (I used kale and it was great)
•1/2 cup freshly chopped parsley

Directions:
1.) mix all ingredients for the sauce in a foods processor or a blender until smooth. Set aside.
2.) In a large pan heat olive oil and add onion and garlic. Sauté until onion is translucent.
3.) Add pepper and sauté for a few minutes until pepper is cooked.
4.) add kale or spinach and mix in until the greens wilt
5.) stir in the sauce, lentils and parsley.
6.) season with salt and pepper
7.) enjoy:)
