As I am in the middle of moving I am trying to wipe out my cupboards and fridge as much as possible. This morning I was up at 5am, yet again, clearing out my cupboards for a healthy concoction! I was quite surprised with the outcome. It’s so yum and simple!

Vegan/vegetarian Rice Stew:

•1 can organic, unsalted diced tomatoes
•1 cup cooked brown rice
•1 onion, chopped
•2-3 chopped garlic cloves
•Any vegetables you wish. I used a mixture of organic frozen veg, mushrooms & zucchini
•dash of sea salt
*For the spices I just eyeballed. Around 1/2 – 1 tbsp for each*
Spices include:
-dill
-parsley
-basil
-red chilli flakes
-paprika
-thyme

1.) sauté garlic & onion in the pot with a splash of water
2.) add everything else except rice
3.) once everything has come to a boil, add rice and let simmer
4.) enjoy 🙂

P.S. once you let it sit, all the liquid absorbs so it would also be so good inside a wrap once cooled!
